Pectin is a natural substance contained in many plant products such as fruit and vegetables, in which it is present in a percentage that depends on both the species and the degree of ripeness.
The term pectin comes from the Greek word "pectos", which means gelatin or solidified, and is a fairly recent ingredient, although it has a long history.
Discovered about 200 years ago by the scientist Vauquelin, it was the research of Braconnot who, in 1824, made possible to isolate this gelifying substance, defining it as pectic acid. Only in 1930 Meyer and Mark discovered the chain formation of the pectin molecule and, in 1937, Schneider and Bock discovered the real composition.
In nature, pectin is a structural element that concretes the space between the cells, keeping them together and giving cohesion and stability to the tissues.
It is precisely its excellent freezing, stabilizing and thickening properties that, since the beginning of the twentieth century, have allowed it to be used on a large scale in the production of many food products.

The raw materials for the production of high or low methoxy pectins, Classic or Amidated, are mainly the apple “pomace” and dried citrus peel.

Pectins are used in the food industry as a gelling agent, especially in the production of jams and marmalades, fruit preparations for yogurt, for ice creams and sorbets or baked goods, candies, gelées and icing for cakes, or as a thickener for creams or desserts, and as a stabilizer for fruit drinks or fermented milk.
