Esprolac

Esprolac is a milk protein blend developed by a group of researchers from the University of Copenhagen as a fat substitute.
Thanks to its excellent stabilizing capacity, in recent years it has become an important ingredient in the production of high quality ice creams, with a limited number of ingredients and reduced use of additives.
Its ability to structure the mixtures in a very fine network and the high water retention lead to a greater resistance of the structure, a reduced syneresis in the finished products and an appreciable increase in creaminess. Furthermore, the small size of the ice crystals makes possible to obtain ice creams with a lower sensation of cold in the mouth.
Unlike many whey proteins, which tend to have bitter aftertaste and dark colors, Esprolac is appreciated for its neutral taste and very white color.
A high quality ingredient that has been highly appreciated by producers engaged in the preparation of products with recipes without E numbers on the label, ideal for the most demanding consumers.
In the markets of Northern Europe, Esprolac has also been used for years in the preparation of margarines, spreadable cheeses, sauces and condiments.

Xanthan gum

Xanthan gum is indicated by the E number E415 and is part of the category of stabilizers – thickening and gelling agents, all the susyances taht increase he viscosity of water solutions to increase the final stabilisation.
It is a polysaccharide obtained by aerobic fermentation of sugar by means of the Xanthomonas Campestris bacterium.
It is used in the food industry as a food additive in the preparation of ice cream and sauces, alone or in combination with other gums, and in the pharmaceutical and cosmetic industry.  

Guar gum

Guar gum is a creamy-white powder obtained by grinding the seeds of a plant, Cyamopsis tetragonoloba, growing mainly in India, Pakistan and in some areas of the USA.
It is widely used as a thickening agent and it is indicated with the E number E412.
Guar gum is used in confectionery products such as ice creams, puddings, desserts, chocolate drinks, sauces, bakery, biscuits and sweets for non-gluten nutrition.
There are also food supplements based on guar gums (gluco-mannans).
