Soy lecithin is extracted from the soya beans and contains a few different compounds, including three main types of phospholipids: phosphatidylethanolamine (PE), phosphatidylcholine (PC), and phosphatidylinositol (PI). It is generally used as an emulsifier in various food applications, as well as a dietary supplement, but it is also used in the cosmetic, feed, pharmaceutical and chemical or technical industries.
Sunflower lecithin is obtained from the seeds of this plant, it is an emulsifier widely used in the food industry, sometimes preferred to other ingredients as it has the advantage of not being considered allergenic.
